We are a Program and Service Provider of Elderly Nutrition Services under Title III of the federal Older Americans Act. The federal legislation is governed in California under Title 22 of the California Code of Regulations, starting with section 7636.1. Section 7638.5 discusses our requirements to prepare meals in accordance with dietary guidelines as follows:
§ 7638.5. Nutrition Requirements of Meals.
(a) Compliance with dietary guidelines:
(1) In accordance with Section 339 of the OAA (42 U.S.C. 3030g-21), each meal shall provide the following to participating individuals:
(A) If the program provides one (1) meal per day, a minimum of one-third (1/3) of the in the Dietary Reference Intakes (DRIs) by the Food and Nutrition Board, Institute of Medicine, National Academy of Sciences (2006), which are incorporated by reference.
(B) If the program provides two (2) meals per day, a minimum of two-thirds (2/3) of the DRIs.
(C) If the program provides three (3) meals per day, one hundred (100) percent of the RDAs.
(2) Meals shall comply with the Dietary Guidelines for Americans (2005. 6th.Edition) by the U.S. Department of Health and Human Services and the USDA, which is incorporated by reference.
(b) A meal analysis approved by a registered dietitian shall be done to ensure compliance with subsection (a) above, using either:
(1) a meal component system, or
(2) a detailed nutritional analysis.
(c) Food substitutions to meals originally planned must meet the requirements of this section and be approved by a registered dietitian.
(d) Menus shall:
(1) Be planned for a minimum of four (4) weeks.
(2) Be posted in a location easily seen by participants at each congregate meal site.
(3) Be legible and easy to read in the language of the majority of the participants.
(4) Reflect cultural and ethnic dietary needs of participants, when feasible and appropriate.
We need a registered dietician to work with our Nutrition Director and site council to develop menus that meet these requirements as well as the preferences of participants. We have recipes that we have been using, but my understanding is that the DRI's have changed and our menus may need to be updated.
In addition to menu development, the registered dietician will be asked to work with the Nutrition Director to develop and sometimes conduct quarterly staff trainings and client nutrition education presentations/materials.
Current registration in good standing with the Academy of Nutrition and Dietetics or equivalent. Ability to plan menus in accordance with Older Americans Act Title III C Elderly Nutrition Program regulations.
Prior experience working with Older Americans Act Title III C Elderly Nutrition Programs highly desired.
