Ultra Processed Foods, the Gut Microbiome, and the Role they Play in IBD
What happens when a dietitian faces the ultimate test at her own dinner table? In this session, a Dr. Dawn Clifford shares the raw, rewarding, and chaotic reality of raising an athlete with both Type 1 Diabetes and Celiac Disease. While textbooks teach us how to count carbs and identify hidden gluten, they rarely prepare us for the emotional toll on the family unit and the constant vigilance of pump alarms and gluten free labeling. Dr. Clifford explains the delicate balance of supporting a child in developing a healthy relationship with food while prioritizing medical safety. Blending clinical knowledge with maternal lived experience, this presentation offers a unique view from "the other side" of the counseling table.
Speaker: Dawn Clifford, PhD RD

Dawn Clifford, PhD, RD is a Professor in the Health Sciences Department at Northern Arizona University. Her research is in behavior change counseling and weight inclusive approaches to health and well-being. She co-authored Motivational Interviewing in Nutrition and Fitness (2nd eds, Guilford Press) and is the author of 5-Minute MI: Motivational Interviewing in Nutrition and Health When Time is Short (Skelly Skills, 2020). In addition to writing and research, she teaches classes in nutrition across the lifecycle, nutrition education and counseling, and motivational interviewing.
